Alfajores Balls

A quick and easy dessert that doesn’t require any baking or professional equipment.
Just like the chocolate balls we all loved in our childhood, but with a sweet caramel twist.
Call them Caramel Balls or Alfajores Balls – it doesn’t really matter, because either way, these are the tastiest little treats you’ll ever eat!
So, let’s get started…

Ingredients:

  • 250g Lotus biscuits
  • 300g Dulce de Leche
  • Coconut flakes

Instructions:

  • Step 1Grind the biscuits or crush them into small pieces in a bag, then transfer to a bowl (I prefer them coarsely crushed so you can really feel the bite of the biscuit).
  • Step 2Add the Dulce de Leche and mix well until you get a very thick mixture that’s ideal to roll. If it feels too soft or sticky to handle, put it in the fridge for an hour (don’t forget to cover the bowl with cling film and press the film directly against the surface to prevent a crust from forming)
  • Step 3Roll into balls - you decide whatever size you like - and coat them in coconut flakes
  • Step 4Store in an airtight container in the fridge until ready to serve

Notes & Tips:

  • In my experience, it’s always better to (at least!) double the amounts.
  • For the adult version, add 2 tablespoons of coffee liqueur to the batter.
